Today.

ABBA, I want to be a real servant. I have doubts that I know how; either that, or I am lazy and selfish – maybe all the above. And I don’t think I am going to be satisfied until I serve well too. You have already started working in me, haven’t You? :) Thank You.

I write. That’s what I do. But that’s not enough. That’s too safe to be all I do.
I teach a class. I love it. I am grateful. But that is not enough.
I pray. Mostly alone. That’s good. I am grateful. But it’s not enough. I want more people to pray with, more often.

Surely, I Did not Post This!

9:32 PM, Wednesday, and here I sit. Not a thing to put on the page, except saying I have not a thing to put on the page.

I thought I wish I had something funny to say. I write about serious stuff so often. Wouldn’t it just be fun to be silly?

It’s been a productive week so far. We’ve run some errands. JT baked a pie. An upside down apple pie. Would you like to have the recipe? See below.

I got my Christmas vanilla beans infusing for Home Infused Vanilla Extract. This is my third year. It’s really simple. Just purchase the beans and the soaking liquid; put them together in a canning jar and let them do their magic. It’s some kinda good for Christmas cookies, carrot cake and homemade ice cream. I have that on good authority. :)

Gosh! I wish I were funnier! I do have hope though.

Upside-Down Apple Pie 6 to 8 servings
Ingredients: 6 tablespoons (3/4 stick) butter, melted, divided
1/2 cup packed light brown sugar
1/2 cup chopped pecans
1 package (15 ounces) folded refrigerated pie crusts
1 cup granulated sugar
1/3 cup all-purpose flour
3/4 teaspoon ground cinnamon
5 large Granny Smith or other firm apples, peeled, cored, and cut into 1/2-inch wedges

Preheat the oven to 375°F. Coat a deep-dish pie plate with nonstick cooking spray and line it with waxed paper. Coat the waxed paper with cooking spray.
In a small bowl, combine 4 tablespoons butter, the brown sugar, and pecans; mix well and spread evenly over the bottom of the pie plate. Unfold 1 pie crust and place it in the pie plate, pressing the crust firmly against the nut mixture and the sides of the plate; set aside.
In a large bowl, combine the granulated sugar, flour, cinnamon, and the remaining 2 tablespoons butter; mix well. Add the apples and toss gently to coat. Spoon into the pie crust.
Unfold the second pie crust and place over the apple mixture. Trim, pinch the edges together to seal, and flute, if desired. Using a knife, cut four 1-inch slits in the top crust.
Bake for 1 to 1-1/4 hours, or until the crust is golden. Carefully loosen the waxed paper around the rim and invert the pie onto a serving plate while still hot. Remove the waxed paper and allow to cool slightly, then cut into wedges and serve warm, or allow to cool completely before serving.
